Lemongrass & Peanut Chicken with Lime & Spiced Sweet Potato
Tender chicken marinated in fragrant lemongrass and peanut, grilled until caramelised and juicy. Served with zesty lime and spiced sweet potato, this dish balances bold Thai flavours with a touch of freshness and heat.

4 Atlas Lemongrass & Peanut Marinated Chicken Maryland Fillet

2 Large Sweet Potatoes

1 Lime

2 Red Onions

4 Pieces Bok Choy

1 Spring Onion Bunch

1 Thai Basil Bunch

1 Coriander Bunch
Directions
1. Prepare the ingredients & preheat the oven to 190 degrees.
Cut the bok choy in half, Peel and grate the sweet potato, Peel and slice the red onion, Thinly slice the lime, Wash the herbs and chopped the spring onion
Place the marinated Chicken, Skin side up on a line baking tray. Place the lime slices on top and bake for 25 minutes until slightly charred and cooked through.
Grill the bok choy, Heat a splash on oil in a frying pan over high heat. Place the box choy in and char on each side for 1 to 2 minutes
Cook the sweet potato. Using the same pan add in the grated sweet potato and sauce until slightly charred and cooked through, Season with a splash of fish sauce or soy sauce
Divide the sweet potato between serving plates and top with a piece of chicken. Sprinkle with the fresh herbs and serve with the bok choy.
