Recipe Description

A top-notch vegetarian dish with gutsy flavours, which are sometimes found lacking in vegetarian cooking. The ‘meatiness’ comes from the earthy umami-ness of the shiitake mushrooms and the malty smokiness of the black vinegar (also called Chinkiang vinegar). Make sure you really blister the beans to get the right crunch and texture.

Ingredient List

150 ml (5 fl oz) grape seed oil
16 shiitake mushrooms, roughly sliced
2 garlic cloves, minced
2 cm (¾ in) piece ginger, minced
60 ml (2 fl oz/¼ cup) soy sauce
20 ml (¾ fl oz) Chinese black vinegar
500 g (1 lb 2 oz) green beans
100 g (3½ oz) crushed peanuts to garnish

Recipe Steps

In a frying pan over a medium–high heat, warm 50 ml (1¾ fl oz) of the oil. Sauté the mushrooms until lightly coloured, then remove from the heat and chop them into a rough mince. Set aside. 

In the same frying pan, over a high heat, warm another 50 ml (1¾ fl oz) of oil and fry the garlic followed by the ginger until golden and crispy. Add in the soy sauce and vinegar and the chopped shiitake mushrooms, and cook, stirring, until it looks like a vegetarian mince. Mix in the crushed peanuts and set aside. 

Put a hot wok or frying pan over the highest possible heat and pour in the remaining oil. When the oil is hot, stir-fry the beans until the skin blisters but the beans aren’t overcooked. 

Once the beans are cooked, pile them on the plates and sprinkle over the peanut and shiitake crumble.
