Beef & Capsicum Tacos with ATLAS Taco Seasoning, Avocado & Cheddar

Destination: Mexico. The ATLAS taco seasoning was created in our kitchen — cumin, oregano, paprika and chilli, preservative-free, sugar-free and far lower in salt than the supermarket packets. Brown the beef, pile everything on the table, and let everyone build their own.

- 1 ATLAS taco seasoning sachet
- 1 cheddar cheese pack
- 6 flour tortillas
- 1 green capsicum
- 1 avocado
- 1 tomato
- 1 red onion

Method
1. Prepare the ingredients. Always read the recipe in full before you begin. Wash the vegetables. Finely dice the onion, capsicum and tomato. Remove and mash the flesh of the avocado. Grate the cheese.
2. Cook the beef mince. Heat a splash of oil in a frying pan over medium heat. Add half the onion, half the capsicum, the beef mince and taco seasoning and cook for about 6 minutes, stirring to break up the mince, until browned and any water released has evaporated.
3. Make the salsa. Meanwhile, combine the remaining onion, remaining capsicum and the tomato. Season to taste with salt and apple cider vinegar. Season the avocado with salt and olive oil.
4. Heat the tortillas. Heat and soften the tortillas directly over a gas flame or in a frying pan. Keep warm by wrapping in a tea towel or in a low oven.
5. Serve. Let everyone build their own tacos — don't forget the cheese!
Chef's tip
Love the taco seasoning? Have a go at making your own at home — cumin, dried oregano, paprika and chilli are the backbone. Adjust the heat to your liking.
