Hummus & Haloumi Mezze Plate with Tomato, Cucumber & Onion Salad & Za’atar Flatbread
Share
Destination: Lebanon. Za'atar is the name of a herb similar to thyme, and also of the staple spice mix found in every Lebanese home - sesame seeds, sumac and dried herbs such as oregano, thyme and marjoram. Mix it with olive oil and spread it on bread, sprinkle it on salad, or even scatter it over eggs.

Method
1. Prepare the salad. Read the recipe in full before you begin. Preheat the oven to 200°C fan-forced. Wash the vegetables. Dice the onion, tomato and cucumber and mix together in a bowl. Season to taste with salt and olive oil.
2. Prepare the flatbread. Lightly drizzle one side of the flatbread with olive oil and sprinkle with some of the za'atar. Cut into quarters and place on a lined baking tray. Bake for about 5 minutes or until lightly browned and crisp.
3. Cook the haloumi. Slice the haloumi. Heat a small splash of oil in a frying pan over medium heat, add the haloumi slices and cook for 1-2 minutes on each side or until golden.
To serve
Divide the salad, flatbread, hummus and haloumi between plates. Sprinkle with the remaining za'atar.
Chef's tips
- Cook the haloumi once you're ready to eat. Haloumi is softest when hot - as it cools, it hardens.
- Wanna wing it? Add your favourite herbs to the salad (mint, parsley or dill), serve with harissa, or top the hummus with smoked paprika.
- You'll want a lined baking tray and a frying pan for this one.
