Mushroom San Choy Bow with Lettuce Cups, Vermicelli & Cashews
Share
Destination: China. Australians were first introduced to Chinese food in the 1850s thanks to the gold rush. Many immigrants found work as chefs, and by 1890 about a third of all cooks in Australia were Chinese. San choy bow has been a favourite ever since, and this vegetarian version swaps the mince for finely diced mushrooms.

Method
1. Prepare the ingredients. Read the recipe in full before you begin. Bring a saucepan or kettle of water to the boil. Finely dice the mushrooms, carrot and onion. Finely slice 1 spring onion per 2 people. Once the water is boiling, soak the vermicelli noodles in the hot water as per the packet instructions, or until soft, then strain and roughly chop.
2. Cook the vegetables. Heat a splash of oil in a frying pan or wok over medium heat. Add the onion and cook for about 2 minutes, stirring often, or until translucent. Add the carrot and mushrooms and cook for about 3 minutes, stirring often, or until the vegetables soften.
3. Add the noodles & sauce. Add the chopped noodles, spring onion and san choy bow sauce to taste. Cook for another 30 seconds, stirring, or until everything is well combined.
4. Make the san choy bow. Carefully separate the lettuce leaves. Fill each lettuce cup with the san choy bow filling and top with the cashews.
